What variety of papaya are you cultivating?

Sir , ripe papaya is perishablefruit , short shelf life …rather you start raw papaya sap ( milky liquid )processing and dehydrate green leaves …Both are used for Papain enzyme manufacturing . once the sap tapping is over convert green papaya into candied fruits commercially known as Tutti Frutti , used in bakery .
